Traditional skills of “Dundee’s Willy Wonka” help deliver Mackie’s a new chocolate bar

THE latest addition to the Mackie’s of Scotland product line up was inspired by the sweetie man, Derek Shaw.

During a visit to the firm’s Aberdeenshire farm, Derek realised Mackie’s had a perfect opportunity to infuse honeycomb “dust” (a by-product after grading honeycomb shards for its ice cream and chocolate) with natural oils from oranges to create a “truly special ingredient”.

He said: “The idea just hit me when I was up there on a visit – and the Mackie’s family were really up for trying it out.”

The fourth-generation family farm still produces all of its ice cream using fresh milk and cream from its own dairy herd.

It also boasts a 10-acre solar array, four wind turbines and a biomass energy plant, all of which means Mackie’s is powered predominately by renewable energy. A £4.5million project is underway to install an innovative new low-carbon refrigeration system, set to be among the greenest in Europe and the first of its kind in Scotland.
