When a renowned Scottish ice cream switched to a new freezing system that makes the product taste smoother and creamier texture, food and drink PR experts couldn’t wait to tell the story.

Mackie’s teamed up with Dr Kerr Matthews, Lecturer in Pharmaceutical Sciences at Robert Gordon University (RGU) to understand the impact of its new state-of-the-art freezer system on its ice cream.

Ice cream was placed under a 200-times magnified lens which found that the new system can freeze faster and was creating smaller, rounded crystals which results in a creamier texture.

The new star frost freezing system not only creates a smoother ice cream, but also contributes to a £4.5m Low Carbon Refrigeration project underway at Mackie’s which is set to reduce the family farm’s energy use and CO2 emissions by up to 80%.
